Paneer is one of my favourite vegetarian. I love it in every form. Palak Paneer is quite a popular dish. This is a yummy combination of spinach and paneer or cottage cheese cubes. After trying a couple of versions of this recipe, I found this one to be very quick and surprisingly very delicious. Cuisine: Indian | Cooking time: 30 mins | Serving: 4-6 people
Spinach leaves – 1 bag
Paneer cubes – 1 cup
Salt – according to taste
Green chillies – 4-5
Oil – 2 tbsp
Cumin seeds – 1/2 tsp
Garlic paste – 1 tsp
Blanch the spinach with some salt for about 2-4 mins or until the leaves are brighter green in colour. Drain into a colander and then run cold water immediately. Grind the spinach with the chillies into a smooth paste.
Heat oil in a pan and toss the cheese cubes until light golden. Remove and drain on an absorbent paper.
To the same oil, add cumin seeds and then the garlic paste. Saute for a minute and then pour the spinach paste into the pan with a little salt. Cook for about 10 mins, stirring at intervals to avoid sticking. At this point, taste the salt and adjust accordingly.
Add the paneer cubes in and let the gravy simmer for a few mins. Mix and turn the heat off.
Serve with paratha or rice.
