EASY PINEAPPLE DESSERT
Hope all had a nice weekend. Mine was a regular one, nothing flash. But we did manage to get some good amount of cleaning done!! And so, I was a little tired to prepare something enormous for dinner.
I am going to be sharing a very easy and quick dessert recipe. The other day I wanted to do something with the two cans of pineapple bits in syrup that were left unused after I baked the Pineapple Cream Cake. I started looking for recipes. Searched the internet for something interesting. I was looking out for a quick dessert recipe, so I could make use of the ingredients I had at hand, as I was a bit lazy going shopping at that time of the day or to prepare a really complex dessert. Moreover, I wanted something that I could do just in time for dinner. So, after about an hour of surfing the internet, watching videos and reading through a dozen of recipes, I came across this easy dessert recipe.
I spotted this video on youtube, where the cook is making this delightful and easy dessert with canned pineapple, crumbled biscuits, and cream. Personally, I love the video blog style. And here is how my dessert turned out! It was perfect after the dinner in the evening and all loved it to the last bit. I hope you enjoy!
Butter (melted) – ~ 1/2 cup
Digestive biscuits – 2 packs
Pineapple chunks or bits in syrup – 1 can (or more)
Fresh cream – .5 ltr
Condensed milk – 1 can
Pineapple essence (optional) – a dash
Crush the biscuits and lay them in a tray, pressing firmly.
Pour the butter over the crumbs, making sure to cover most of the biscuit.
Lay pineapple bits on the crumbs, again making sure you spread them evenly.
Pour the syrup all over. Note: Careful you do not pour a lot of the syrup! Just enough to give it a flavour.
In a mixer, beat the cream and condensed milk with a little pineapple essence until the cream is fluffy and soft peaks form.
Spread the cream over the biscuit and pineapple layer. Sprinkle with remaining crumbs and let it rest in the fridge for about 4 hours before serving.
