CRISPY FRIED CHICKEN

Hello! Hope everyone’s doing their best. About 7 or 8 years back, I somewhat started to take a little interest in the kitchen. My mum was excited as I had at least expressed some interest in cooking. But it was more about exploring my skills more than learning! I wanted to break some rules and try things on my own, much to the frustration of my mum, who wanted me to learn and master the traditional family recipes!

This recipe is one of those very first of mine, which was an instant hit when while trying to work out with different ingredients to get a crispy fried chicken or fish fingers etc. The success of this chicken recipe was such that we did this version when we invited my then would-be in law family for dinner!  Before this, I had seen and assisted my Mama (uncle) with his attempt at making KFC style chicken for us, using beaten egg and bread crumbs to coat and then deep fry marinated pieces of chicken. With all the great memories, of my uncle and the very first recipe I made for my (then future) in-laws, I give you the recipe of Crispy Fried Chicken!

Cuisine: Oriental | Cooking time: 60 mins |  Serving: 4 people

Ingredients
Chicken legs or you can use thighs – 8
Ginger garlic paste – 1 1/2 tbsp
Red chilli powder – 2 tbsp
Salt
Turmeric powder – 1/4 tsp
Lemon juice – 2 tbsp
Oil for deep frying
Bread crumbs
1 egg

For the batter:
White flour – 2 tbsp
Corn starch – 2 tbsp
Pepper powder – 1 tsp
Salt
Mixed herbs (optional)

Directions

Wash and wipe the chicken with a clean kitchen towel.
Marinate with ginger garlic paste, salt, red chilli powder, turmeric powder and lemon juice. Mix well and keep aside for an hour.
In a wide bowl, beat the egg. Mix the flours with salt, pepper and bread crumbs in a separate plate.
Dip the chicken pieces in egg, roll in the flour mixture and deep fry until golden crisp.
Remove on kitchen paper. Serve with ketchup or as a side with vegetable biryani or fried rice.
